  • 2 yellow onions (roughly chopped)
  • 3 tablespoons ginger (chopped)
  • 6 cloves garlic (crushed)
  • 28 ounces crushed tomatoes (1 can)
  • 1 pound chicken breasts or thighs (cut into bite-sized pieces)
  • ½ cup whipping cream
  • 2 tablespoons almond butter
  • Sea salt (to taste)
  • 1 tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 pieces cardamom pods (seeds only)

Instructions

  1. In a large pan over medium-high heat, melt the butter and sauté the onions, ginger, and garlic until well-browned.
  2. Mix all spices in a bowl and add them to the pan; cook for about 1 minute to release flavors.
  3. Stir in the crushed tomatoes and scrape the bottom of the pan for additional flavor; blend until smooth.
  4. Return the sauce to the pan, add chicken pieces and water; simmer for about 10 minutes until chicken is fully cooked.
