  • 3 tablespoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 minced garlic clove
  • 1 teaspoon kosher salt (split)
  • 1/2 cup olive oil
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the Potatoes: Boil salted water in a large pot, add small white potatoes, and cook for 15-20 minutes until tender.
  2. Blanch the Green Beans: In boiling water, blanch fresh green beans for 3-4 minutes until bright green; transfer to ice water.
  3. Make the Dressing: Whisk together balsamic vinegar, dijon mustard, minced garlic, half of the kosher salt, then slowly drizzle in olive oil.
  4. Combine Everything: Cut cooled potatoes into bite-sized pieces. In a mixing bowl, combine potatoes, blanched green beans, remaining salt and black pepper, chives, and dressing. Toss gently.
  5. Serve & Enjoy: Chill for 30 minutes or serve immediately.
