  • 2 15oz cans chickpeas, drained and rinsed
  • 34 cups cooked quinoa
  • 2 cups frozen edamame, shelled and thawed
  • 1 cup purple cabbage, shredded
  • 4 medium carrots, peeled and julienned
  • 34 English cucumbers, cut into ribbons
  • 1 tablespoon extra virgin olive oil
  • Kosher salt, to taste
  • 1/3 cup extra-creamy peanut butter
  • 4 tablespoons unsweetened almond milk
  • 3 tablespoons water, more if needed
  • 1 tablespoon pure maple syrup, more if desired
  • 1/4 teaspoon sesame oil

Instructions

  1. Preheat oven to 400°F. Pat chickpeas dry with a paper towel.
  2. Spread chickpeas on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for about 20 minutes until crispy.
  3. While roasting, mix peanut butter, almond milk, water, maple syrup, and sesame oil in a bowl until smooth.
  4. In bowls, layer roasted chickpeas, quinoa, edamame, carrots, and cucumber.
  5. Drizzle with peanut dressing before serving.
