  • ⅔ cup white sugar
  • ½ cup (113 g) unsalted butter, room temperature
  • 1 cup (200 g) white sugar
  • 1 large egg
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup (80 g) milk
  • 1 teaspoon vanilla extract
  • ½ cup (120 g) raspberry coulis (from above)
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 can (400 g) sweetened condensed milk
  • ½ cup (120 g) raspberry coulis (from above)
  • 12 fresh raspberries

Instructions

  1. Prepare the raspberry coulis by cooking raspberries with sugar until thickened, then blending until smooth.
  2. Preheat your oven to 350°F (180°C) and cream together softened butter and sugar. Add the egg and mix well.
  3. Combine dry ingredients in a separate bowl, then gradually incorporate into the butter mixture alongside milk and raspberry coulis.
  4. Pour batter into lined cupcake pans and bake for about 17 minutes.
  5. Once cooled, fill each cupcake's center with raspberry coulis.
  6. Make the Russian buttercream by whipping softened butter, then gradually add sweetened condensed milk and raspberry coulis.
