  • 9 Tbsp unsalted butter, at room temperature
  • 1 cup sugar
  • Zest of 1 lemon
  • 3 large eggs, separated
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup plain Greek yogurt (or vanilla yogurt)
  • 1 1/2 cups raspberries (frozen berries work great)
  • 1 cup unsalted butter, at room temperature
  • 5 cups confectioner's sugar, sifted
  • 4 Tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cake pans.
  2. Cream together unsalted butter and sugar until light and fluffy.
  3. Add egg yolks one at a time along with lemon zest and vanilla extract, mixing well.
  4. In a separate bowl, whisk together flour, baking powder, salt, and baking soda.
  5. Mix Greek yogurt into the wet mixture until smooth.
  6. Gradually combine dry ingredients with the wet mixture while folding in raspberries carefully.
  7. Pour batter into prepared pans and bake until golden brown (about 25-30 minutes).
  8. Make the frosting by beating butter and confectioner’s sugar together before adding fresh lemon juice.
  9. Once cooled, layer cakes with frosting in between before icing the top and sides.
