  • 1 cup bell peppers (red and yellow), diced

  • 1 cup canned tomatoes (crushed)
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil. Sauté the onion and garlic until fragrant (about 5 minutes).
  3. Stir in the crushed tomatoes along with dried basil and thyme; let simmer for about 10 minutes.
  4. Layer half of the tomato mixture in the baking dish. Artfully arrange the diced vegetables on top.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake uncovered for an additional 15 minutes until vegetables are tender.
  6. Serve warm with a drizzle of olive oil or balsamic glaze if desired.
