  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp unsalted butter
  • 1 medium sweet onion, diced
  • 2 sticks celery, finely chopped
  • ½ cup sun-dried tomatoes, finely chopped
  • 4 cloves garlic, finely chopped
  • 2 Tbsp tomato paste
  • 4 cups low-sodium chicken broth
  • 2 Tbsp pesto, store-bought or homemade
  • 16 oz dried potato gnocchi
  • ½1 cup heavy cream, adjust to preference
  • 5 oz fresh baby spinach
  • ½ cup Parmesan, grated

Instructions

  1. Season cubed chicken with salt, oregano, and pepper in a bowl.
  2. Heat olive oil and butter in a pot over medium-high heat. Brown the chicken for about 4-5 minutes; transfer to a plate.
  3. In the same pot, sauté diced onion and celery with salt until translucent (3-5 minutes). Add sun-dried tomatoes, garlic, and tomato paste; stir well.
  4. Pour in chicken broth and add pesto; bring to a boil, then reduce heat to simmer for 10-15 minutes.
  5. Return chicken to the pot and stir in gnocchi; cook until they float (about 3-5 minutes).
  6. Stir in cream, spinach, and Parmesan cheese. Adjust seasoning as needed before serving.
