  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 ½ cups cherry or grape tomatoes (halved)
  • 1 tbsp olive oil (for roasting)
  • ¼ cup finely diced red onion or shallot
  • ¼ cup chopped fresh basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp apple cider vinegar or lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic (minced)
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Spread corn on a baking sheet, drizzle with olive oil, salt, and pepper. Roast for 15-20 minutes until golden.
  2. Boil salted water in a large pot. Cook pasta according to package instructions until al dente. Drain without rinsing.
  3. In a small bowl, whisk together vinaigrette ingredients: olive oil, apple cider vinegar (or lemon juice), Dijon mustard, garlic, salt, and pepper.
  4. In a large bowl, combine cooked pasta with roasted corn, halved tomatoes, diced onion/shallot, chopped basil, and vinaigrette. Toss gently until well coated.
  5. Chill for at least 30 minutes for enhanced flavor before serving.
