  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 1 cup ricotta cheese
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • ¼ cup fresh basil, chopped
  • ¼ cup pine nuts, toasted

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss sliced zucchini, yellow squash, bell peppers, red onion, and halved cherry tomatoes with olive oil, garlic powder, smoked paprika, oregano, salt, black pepper, and optional red pepper flakes.
  3. Spread the vegetable mixture on a baking sheet in a single layer and roast for 25-30 minutes until tender.
  4. While veggies roast, blend ricotta cheese with lemon zest, lemon juice, and honey in a food processor until smooth.
  5. Once roasted, arrange the veggies atop whipped ricotta on a serving platter and garnish with fresh basil and toasted pine nuts.
