  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups milk (preferably at room temperature)
  • 1 cup fontina cheese, grated
  • 2 cups parmesan cheese, freshly grated (divided)
  • 1 tablespoon fresh sage, chopped
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon ground black pepper
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, melt the butter over medium heat. Stir in the flour, cooking for about 1-2 minutes until lightly golden.
  3. Gradually whisk in the milk, stirring continuously until the mixture thickens.
  4. Remove from heat and mix in fontina cheese, 1 cup of parmesan cheese, sage, nutmeg, and black pepper until smooth.
