1 cup quinoa
6 ounces wild Alaskan salmon
1/4 red onion, finely chopped
12 fresh asparagus spears
1/2 avocado, cubed
Juice and rind of one lemon
2 tbsp extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp honey
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Spray a baking pan with non-stick spray and place the salmon skin-side down. Season with salt and pepper. Bake for 10-15 minutes until flaky.
In a medium pot, bring 2 cups of water to a boil. Add rinsed quinoa, cover, reduce heat to medium-low, and simmer for about 12-15 minutes until liquid is absorbed. Fluff and let cool.
Steam trimmed asparagus in a vegetable steamer over boiling water for approximately 10 minutes until tender-crisp. Slice into bite-sized pieces.
In a small bowl, whisk together olive oil, lemon juice & rind, Dijon mustard, honey, salt, and pepper.
In a large bowl, combine cooled quinoa, chopped red onion, and asparagus. Toss with the vinaigrette until evenly coated.
Add diced avocado and baked salmon just before serving; gently toss again.
