  • 3 medium apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan. Combine graham cracker crumbs, sugar, and melted butter; press into the pan bottom. Bake for 10 minutes.
  2. Beat softened cream cheese until smooth; add sugar gradually. Mix in eggs one at a time, then fold in vanilla and sour cream. Pour over cooled crust.
  3. Place the springform pan in a larger roasting pan filled halfway with hot water. Bake for 55-65 minutes until the center is set but slightly jiggly.
  4. While baking, melt butter in a skillet; add apples, brown sugar, cinnamon, and nutmeg. Cook until soft (about 8 minutes). Cool mixture.
  5. For the salted caramel: Melt sugar in a saucepan over medium heat until amber; stir in butter and whisk in heavy cream carefully. Add sea salt.
  6. Once fully cooled (at least four hours), top cheesecake with apple mixture and drizzle with salted caramel before serving.
