  • 100 g Almond flour
  • 100 g Powdered sugar
  • 76 g Egg whites (room temperature)
  • 100 g Granulated sugar
  • 25 ml Water
  • 100 g White chocolate chips
  • 120 ml Heavy cream (full fat)
  • 50 g Salted butter caramel
  • 1 tsp Vanilla extract

Instructions

  1. Preheat oven to 150°C (300°F). Line baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together in a bowl. In another bowl, whisk egg whites until soft peaks form, then add granulated sugar and whisk until stiff peaks form.
  3. Fold dry ingredients into egg whites gently until just combined.
  4. Pipe small circles onto prepared baking sheets and let rest for 30 minutes.
  5. Bake for about 15 minutes or until easily lifted from parchment.
  6. For the filling, heat heavy cream and pour over white chocolate chips; stir until smooth. Add salted butter caramel and vanilla extract, mixing well.
  7. Once shells are cool, pipe filling onto half of the shells and sandwich with the remaining halves.
