  • 2 medium carrots (diced)
  • 1 medium onion (chopped)
  • 2 celery stalks (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Chop the carrots, celery, onion, and garlic into small pieces.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic; sauté until softened (about 5 minutes).
  3. Stir in the chopped carrots and celery; cook for another 5 minutes until tender.
  4. Add rinsed lentils, vegetable broth, and bay leaves. Bring to a gentle boil.
  5. Reduce heat to low, cover, and let it simmer for about 30 minutes until lentils are tender.
  6. Remove bay leaves; season with thyme, salt, and pepper to taste.
