  • 1 lb scallops (fresh or thawed)
  • 12 oz pasta (short shape like busiati)
  • 12 large shrimp (peeled and deveined)
  • 3 cloves garlic (minced)
  • 3 oz butter (salted)
  • 1/3 cup dry white grape juice
  • 3 Tbsp extra virgin olive oil
  • Fresh parsley, lemon wedges, Kosher salt, black pepper

Instructions

  1. Soak scallops in a brine solution (1 Tbsp Kosher salt in water) for 10 minutes; drain and dry.
  2. Boil salted water, cook pasta according to package instructions (about 7 minutes).
  3. In a hot cast iron pan, add olive oil and sear scallops for 1½ minutes; then add shrimp, garlic, and parsley.
  4. Cook for another 2 minutes; turn the seafood and cook for another minute.
  5. Add grape juice to deglaze the pan; reduce heat.
  6. Stir in butter until melted; season with black pepper.
  7. Combine drained pasta with seafood mixture; stir gently and serve immediately.
