  • 5 ½ cups whole milk
  • 4 cups smoked gouda cheese, shredded
  • 8 tablespoons unsalted butter, divided
  • ½ cup all-purpose flour
  • ½ cup Parmesan cheese, shredded (divided)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups Panko bread crumbs
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 375°F (190°C) and butter a 3-quart casserole dish.
  2. Prepare the topping by mixing Panko breadcrumbs, thyme leaves, and half the Parmesan with melted butter.
  3. For the cheese sauce, heat whole milk in one pan while melting butter in another. Whisk in flour until golden; then gradually add milk until thickened.
  4. Stir in Dijon mustard and seasonings followed by cream cheese and three cups of smoked gouda until smooth.
  5. Cook elbow pasta until just under al dente, drain, and combine with cheese sauce.
  6. Pour into the prepared dish, top with breadcrumbs and remaining gouda. Bake for about 30 minutes until golden brown.
