  • 3 cups cassava flour
  • 1 cup flax milk (or other plant milk)
  • 2 tablespoons date sugar
  • 4 tablespoons coconut butter
  • 1 cup chocolate chips
  • 1 cup natural peanut butter
  • 2.5 cups organic powdered sugar
  • 3 teaspoons psyllium husk powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pack instant yeast (2 teaspoons)
  • 1 cup water
  • 1/4 cup coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast by dissolving it in warm water for about 10 minutes until foamy.
  2. In a bowl, mix cassava flour, psyllium husk powder, date sugar, baking powder, baking soda, and salt.
  3. Combine the yeast mixture with the dry ingredients and wet ingredients to form a soft dough.
  4. Allow dough to rise in a warm place for 45 minutes to an hour.
  5. Roll out the dough into a rectangle and spread melted chocolate filling mixed with cacao powder and chopped peanuts over the surface.
  6. Roll tightly and slice into pieces; place in a greased baking dish.
  7. Bake at 350°F for about 20–25 minutes until set.
  8. Prepare the peanut butter icing while baking and generously ice the rolls once they cool slightly.
