  • 8 oz rice noodles
  • 3 tablespoons minced fresh ginger
  • 2 medium cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon agave nectar
  • 1/4 cup rice apple vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons canola oil or vegetable oil
  • 1/21 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 11/2 cups shredded green or purple cabbage
  • 1 small cucumber, julienned
  • 2 small carrots, julienned
  • 1 medium sweet pepper, julienned
  • 1/4 cup firmly-packed minced cilantro
  • 1/4 cup firmly-packed minced mint
  • 1/4 cup chopped roasted peanuts
  • Additional cilantro and sesame seeds for topping

Instructions

  1. In a bowl, whisk together minced ginger, garlic, soy sauce, agave nectar, rice vinegar, sesame oil, canola oil, red pepper flakes, salt, and pepper to create the dressing.
  2. Boil water in a pot and cook rice noodles according to package instructions. Drain and rinse under cold water.
  3. While noodles cook, chop cabbage, cucumber, carrots, and sweet pepper into bite-sized pieces.
  4. In a large mixing bowl, combine cooled noodles with vegetables and fresh herbs. Pour dressing over the top and toss gently until everything is well coated.
  5. Serve in bowls topped with roasted peanuts, additional cilantro, and sesame seeds if desired.
