  • 1 box (13.25 oz) vanilla cake mix
  • â…“ cup neutral oil (vegetable or avocado)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Pinch salt
  • 12 oz candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat oven to 325°F (165°C) according to cake mix instructions.
  2. In a large bowl, combine cake mix, oil, milk (or water), eggs, and softened butter until well blended.
  3. Pour batter into a greased baking pan and bake per package directions. Test doneness with a toothpick.
  4. After baking, crumble the warm cake into a large bowl.
  5. In a separate bowl, combine buttercream ingredients until smooth and mix into the crumbled cake.
  6. Roll mixture into balls (about 1¼ inches in diameter) and chill in the freezer for 15 minutes.
  7. Melt a small amount of candy melts; dip lollipop sticks and insert them halfway into each ball.
  8. Chill again for another 15 minutes before fully dipping each pop in melted candy melts.
  9. Tap off excess coating and add sprinkles quickly before they set.
