Ingredients

Scale
  • 2 lbs sirloin steak (or flank steak)
  • ¼ cup olive oil
  • 3 Tbsp fresh lime juice
  • ¼ cup chipotle peppers in adobo sauce
  • 3 cloves garlic, minced
  • ½ cup rice (uncooked)
  • 2 small avocados
  • ½ cup canned black beans
  • ½ cup corn kernels
  • Optional: sour cream, shredded romaine, shredded cheese

Instructions

  1. Marinate the Steak: Combine olive oil, lime juice, chipotle peppers, garlic, salt, pepper, cumin, and oregano in a bowl. Add the steak and coat well. Marinate for at least 10 minutes.
  2. Prepare Ingredients: While the steak marinates, slice the veggies and cook the rice according to package instructions (about 20 minutes).
  3. Cook the Steak: Heat a skillet over medium-high heat with some oil. Sear the marinated steak for about 3-5 minutes on each side until cooked to your liking. Remove from heat and let rest.
  4. Sauté Vegetables: In the same skillet, add sliced peppers and onions with more oil if needed. Cook until slightly charred.
  5. Make Guacamole: Mash avocados with salt, cilantro, and diced jalapeños in a bowl until smooth yet chunky.
  6. Assemble Bowls: Start with rice or greens in each bowl. Layer sautéed veggies, sliced steak, guacamole, corn kernels, black beans, tomatoes, and optional garnishes like sour cream or cheese.
