Ingredients

Scale
  • 1.25 lbs flank steak (or strip steak)
  • Sea salt and cracked black pepper
  • 1 tablespoon avocado oil
  • 8 slices nitrate-free turkey bacon
  • 4 large hardboiled eggs
  • 8 cups romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (sliced)
  • 1 large avocado (sliced)
  • 1 medium ripe avocado (for dressing)
  • 1/3 cup almond milk Greek yogurt
  • 1/4 cup + 2 tablespoons plain almond milk
  • 1/3 cup cilantro leaves
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 2 tablespoons fresh lime juice

Instructions

  1. Prepare your ingredients: Cook and crumble the turkey bacon, and hardboil the eggs.
  2. Season the flank steak generously with salt and pepper. Heat a skillet or grill until hot, then cook the steak for about 3–4 minutes on each side for medium-rare.
  3. Let the cooked steak rest under foil for approximately 10 minutes.
  4. Assemble your salad by layering greens, tomatoes, onions, hardboiled eggs, and crumbled turkey bacon in a large bowl.
  5. Slice the rested steak against the grain and place on top of the salad.
  6. Blend all dressing ingredients until smooth; drizzle over salad just before serving.
