  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Place chicken breasts between plastic wrap and pound to about ½ inch thick.
  2. Set up your breading station: In one bowl, mix flour with salt, pepper, garlic powder, and onion powder. In another bowl, whisk eggs with water. Combine Parmesan cheese with breadcrumbs in a third bowl.
  3. Coat each chicken breast in the flour mixture, then dip into the egg mixture, and finally press into the breadcrumb mixture.
  4. Heat vegetable oil in a skillet over medium heat. Cook chicken for about 4-5 minutes on each side until golden brown.
  5. Transfer chicken to a baking sheet lined with parchment paper. Top with mozzarella cheese and bake for 8-10 minutes until melted.
  6. Drizzle melted butter on top and sprinkle with parsley before serving.
