  • 1 cup celery, chopped
  • 1/2 cup carrots, grated
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 cups vegetable or chicken broth
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion, garlic, celery, and carrots until softened (about 5-7 minutes).
  3. In a large bowl, combine cubed bread with sautéed veggies, sage, thyme, salt, and pepper.
  4. In another bowl, whisk together eggs, broth, and milk; pour over the bread mixture and stir gently.
  5. Transfer to a greased baking dish; top with cheddar cheese.
  6. Bake for 40-45 minutes until golden brown.
  7. Let cool slightly before serving; garnish with fresh parsley.
