  • 1 cup black beans (drained)
  • 1 cup corn (canned or frozen)
  • 23 cups fresh kale (chopped)
  • 12 sweet potatoes (cubed)
  • 2 tablespoons extra virgin olive oil
  • 8 small tortillas
  • 1/2 cup tahini
  • 12 tablespoons real maple syrup

Instructions

  1. Preheat the oven to 350°F. Cube sweet potatoes, toss with 1 tablespoon olive oil and salt, then roast on a parchment-lined sheet pan for 20-25 minutes until soft.
  2. In a skillet over medium heat, sauté chopped kale with the remaining tablespoon of olive oil and salt for about 2-3 minutes until wilted.
  3. In a small bowl, whisk together tahini and maple syrup until smooth.
  4. Assemble tacos by layering sautéed kale, black beans, corn, and roasted sweet potatoes in tortillas. Drizzle with tahini sauce and serve with lime wedges.
