  • 1 lb ground turkey

  • 1 1/2 tbsp taco seasoning
  • 1 tsp chili powder (or to taste)
  • 4 cups chicken stock
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can black beans (rinsed and drained)
  • 1 (15 oz) can chickpeas (rinsed and drained)
  • 1 cup frozen corn

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground turkey, salt, and pepper; cook until no longer pink.
  2. Stir in chopped onion, garlic, taco seasoning, and chili powder. Sauté for 5 minutes until onions are translucent.
  3. Add chicken stock, diced tomatoes, black beans, chickpeas, and corn; stir well.
  4. Bring to a boil then reduce heat to simmer for 15 minutes.
