  • 8 rice paper sheets
  • 1 cup cooked vermicelli noodles
  • 1/2 cup shredded carrots
  • 1 cup finely chopped cabbage
  • 1 block firm tofu (or substitute with other proteins)
  • 2 tablespoons sliced green onion
  • 2 teaspoons grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar (or rice vinegar)
  • 1 tablespoon sesame oil
  • Oil spray for air frying

Instructions

  1. Soak each rice paper sheet in warm water for 10–15 seconds until soft.
  2. Transfer the sheet to a damp surface to prevent sticking.
  3. Add a layer of cooked vermicelli noodles, shredded carrots, chopped cabbage, and tofu to the center of the rice paper.
  4. Fold in the sides and roll tightly from the bottom to secure the filling.
  5. Lightly brush or spray each roll with sesame oil for crispiness.
  6. Preheat your air fryer to 375°F (190°C) for even cooking.
  7. Arrange rolls seam-side down in a single layer in the air fryer basket.
  8. Air fry for about 8–10 minutes, flipping halfway through until golden brown.
  9. Serve hot with your choice of dipping sauce.
