  • ½ cup Macadamia Nuts (chopped)
  • For the Coconut Syrup: 1 can Coconut Milk
  • ½ cup Sugar
  • 2 tablespoons Light Karo Syrup
  • Pinch of Salt

  1. Preheat your oven to 250°F (120°C). Spread sweetened flaked coconut on a baking sheet and toast for about 18-20 minutes until golden brown.
  2. In a large bowl, mix flour, baking powder, and salt. Add melted butter, sugar, eggs, buttermilk, and vanilla; stir until just combined.
  3. Heat skillet over medium-low heat. Grease lightly and pour in batter (about half a cup per pancake) while sprinkling toasted coconut on top.
  4. Cook until bubbles form on the surface before flipping to cook the other side until golden brown.
  5. For the syrup, whisk together coconut milk, sugar, and Karo syrup in a saucepan over medium heat; simmer for about 8-10 minutes until thickened.
