  • 200g (1 cup) unsalted butter, softened
  • 200g (1 cup) light brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 250g (2 cups) self-raising flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 tbsp milk
  • 2 medium apples, peeled, cored, and diced
  • 100g (3/4 cup) walnuts, chopped
  • 100g (3/4 cup) dates, pitted and chopped

Instructions

  1. Preheat your oven to 170°C (340°F) and prepare your cake tin.
  2. Cream softened butter and light brown sugar together until fluffy.
  3. Add eggs one by one, mixing well after each addition along with vanilla extract.
  4. In a separate bowl, whisk self-raising flour, cinnamon, nutmeg, and salt.
  5. Fold dry ingredients into the butter mixture, alternating with milk until smooth.
  6. Gently fold in diced apples, chopped walnuts, and dates.
  7. Pour batter into the prepared tin and smooth the top.
  8. Bake for 45-50 minutes or until a skewer comes out clean.
  9. Prepare warm toffee sauce by heating brown sugar and butter with double cream until thickened.
  10. Drizzle sauce over cooled cake before serving.
