  • 1 block (14 oz) firm or extra-firm tofu
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • ½ cup sliced carrots
  • ½ cup snap peas
  • ½ cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup, optional
  • 1 teaspoon cornstarch, optional
  • 2 tablespoons water

Instructions

  1. Press and cube the tofu into bite-sized pieces. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Cook the tofu until golden brown on all sides (about 5-7 minutes).
  2. Add another tablespoon of vegetable oil if needed. Sauté garlic and ginger until fragrant. Then add broccoli, bell peppers, carrots, snap peas, and mushrooms; stir-fry for about 4-5 minutes until tender-crisp.
  3. In a small bowl, mix the sauce ingredients (soy sauce, sesame oil, rice vinegar, optional honey/maple syrup, cornstarch if using). Pour over the sautéed vegetables and stir well for an additional minute.
  4. Top with sesame seeds and chopped green onions before serving.
