Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • 2 tablespoons all-purpose flour (for filling)
  • 1 teaspoon vanilla bean paste
  • ¼ cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together the softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in buttermilk and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Fill each cupcake liner halfway with batter.
  5. In a separate bowl, mix cream cheese and sugar until smooth. Add egg, flour, and vanilla bean paste; blend until combined.
  6. Spoon cheesecake filling on top of each cupcake base.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool in the tin for about 10 minutes before transferring to a wire rack.
  9. Once cool, sprinkle granulated sugar over the tops and caramelize using a kitchen torch or broiler.
  10. Garnish with optional vanilla bean seeds before serving.
