  • 3 tablespoons ground flax + 9 tablespoons water (flax eggs)
  • 1 ½ cups coconut sugar
  • 6 tablespoons creamy almond butter
  • ¾ cup coconut butter (softened)
  • ¾ cup coconut oil (softened)
  • 2 teaspoons vanilla extract
  • 3 ½ cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup chopped walnuts
  • 2 Honeycrisp apples (thinly sliced)
  • 2 Granny Smith apples (thinly sliced)

Instructions

  1. Preheat your oven to 375°F.
  2. In a stand mixer, combine coconut sugar, almond butter, coconut butter, coconut oil, and vanilla extract until smooth.
  3. Add whole wheat flour, baking soda, salt, and cinnamon; mix until combined. Adjust consistency with water if needed.
  4. Line a 9×12 baking pan with parchment paper and spread the dough evenly across the bottom.
  5. Arrange thin apple slices on top in a checkerboard pattern.
  6. Bake for about 45 minutes or until a toothpick comes out clean; add time if necessary.
  7. Cool in the pan for ten minutes before transferring to a wire rack to cool completely before slicing.
