  • 1 can Pigeon Peas
  • 3 cups Rice
  • 3 tbsp Tomato Paste
  • 3 tsp Sazon
  • 1/2 tsp Adobo
  • 8 tbsp Recaito
  • 3 tbsp Coconut Oil
  • 5 Bay Leaves
  • 1/2 tsp Oregano
  • 1/8 tsp Salt
  • 1 tbsp Lemon Juice (optional)
  • 3 cups Low-Sodium Vegetable Broth

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a cast iron Dutch oven, heat coconut oil over medium-high heat, add sofrito, and sauté for 2–3 minutes until caramelized.
  3. Stir in tomato paste, spices, and canned pigeon peas (with liquid). Simmer for 8–10 minutes.
  4. Add rinsed rice and vegetable broth; cook on medium-high until liquid mostly evaporates. Lower heat, cover tightly, and cook for an additional 25 minutes.
  5. Let the dish rest for another 15–20 minutes before serving.
