  • 1 ¼ cup pastry flour (or 1 cup + 2 Tbsp all-purpose flour with 2 Tbsp cornstarch)
  • ½ teaspoon salt
  • ½ teaspoon cardamom
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup vegan butter
  • ¼ cup shortening
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • ½ teaspoon rosewater (adjust according to preference)
  • 1 ½ cups powdered sugar (add more for sweeter frosting)
  • 2 tablespoons dried rose petals (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together oat or almond milk, sugar, olive oil, and vanilla bean paste until well blended.
  2. In another bowl, combine pastry flour, salt, cardamom, baking powder, and baking soda. Mix well.
  3. Gradually add the dry mixture to the wet ingredients while stirring gently until just combined.
  4. Pour batter into lined cupcake tins, filling each about two-thirds full. Bake for approximately 22 minutes or until a toothpick comes out clean.
  5. While cooling, prepare the frosting by creaming vegan butter and shortening; add powdered sugar gradually along with vanilla bean paste and rosewater.
  6. Once cupcakes are cool, frost generously and decorate with optional dried rose petals.
