  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil

Instructions

  1. Press the tofu between clean kitchen towels for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into cubes and coat with cornstarch.
  3. Heat oil in a skillet over medium-high heat and cook the tofu until golden brown on all sides.
  4. Remove tofu and sauté bell peppers and onion in the same pan until caramelized.
  5. Add garlic and ginger; sauté for another 30 seconds.
  6. Stir in pineapple chunks and cook for an additional few minutes until caramelized.
  7. Combine soy sauce, rice vinegar, and maple syrup in a bowl; pour over the mixture in the skillet along with tofu.
  8. Stir gently for about two minutes until everything is well-coated.
