  • 1 Tbsp Coconut Oil
  • 1 Large Sweet Onion, finely diced
  • 2 Celery Stalks, sliced
  • 2 Large Carrots, peeled and chopped
  • 2 Garlic Cloves, grated
  • 2 Inch Piece Fresh Ginger, peeled and grated
  • 1 Red Chili, sliced (or to taste)
  • 1/4 Cup Peanut Butter
  • 4 Cups Low-sodium Vegetable Broth
  • 2 Large Sweet Potatoes, peeled and chopped
  • Sea salt and pepper, to taste
  • 2 Green Onions, sliced (for garnish)
  • 4 tablespoons Roughly Chopped Peanuts (for garnish)

Instructions

  1. Heat coconut oil in a large stockpot over medium-high heat. Sauté diced onion, sliced celery, chopped carrots, grated garlic, and ginger for 5-6 minutes until softened.
  2. Stir in sliced chili and peanut butter. Add chopped sweet potatoes, vegetable broth, salt, and pepper. Bring to a boil.
  3. Reduce heat, cover, and simmer for 18-20 minutes until sweet potatoes are tender.
  4. Blend the mixture until smooth using an immersion blender or by carefully transferring batches to a regular blender.
  5. Garnish with sliced green onions and chopped peanuts before serving.
