  • 6 Tablespoons coconut oil (melted)
  • 1 cup raw pecans
  • 3/4 cup almond flour
  • 3 Tablespoons maple syrup
  • 1/2 cup unsweetened coconut flakes
  • 1 Teaspoon vanilla extract
  • 2 Teaspoons ground cinnamon
  • 1/2 Teaspoon ground nutmeg
  • 1/4 Teaspoon ground allspice
  • 3 Tablespoons coconut sugar
  • Additional maple syrup to drizzle on top

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Place hollowed apples in an oven-safe pan and bake for 5-7 minutes.
  3. In a food processor, pulse coconut flakes and pecans until roughly ground.
  4. In a bowl, combine the coconut-pecan mixture with cinnamon, nutmeg, allspice, and coconut sugar.
  5. Stir in melted coconut oil, maple syrup, and vanilla extract until clumps form.
  6. Fold in roughly chopped apple flesh from hollowed apples.
  7. Fill each apple generously with the mixture.
  8. Bake for an additional 20-25 minutes until golden brown.
