  • 2 onions (diced)
  • 4 garlic cloves (chopped)
  • 0.5 pound sweet mini peppers (chopped)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 tsp Italian seasoning
  • 15 ounces diced tomatoes (one can)
  • 1 cup low-sodium vegetable stock
  • 1 tablespoon balsamic vinegar
  • 30 ounces chickpeas (drained, 2 cans)
  • 4 cups spinach (roughly chopped)
  • Kosher salt and ground pepper (to taste)
  • Fresh chopped parsley or basil (to garnish, OPTIONAL)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sauté diced onions for about 5 minutes until golden brown.
  2. Add garlic, sweet mini peppers, sun-dried tomatoes, and Italian seasoning; sauté for 1 minute.
  3. Stir in diced tomatoes, vegetable stock, balsamic vinegar, and drained chickpeas. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In the last few minutes of cooking, add chopped spinach and season with salt and pepper to taste.
  5. Serve hot, garnished with fresh herbs if desired.
