  • 1 cup whole milk
  • 1/3 cup grated parmesan
  • 3 tbsp olive oil
  • 1 onion (diced)
  • 3 garlic cloves (chopped)
  • 29 oz tomato sauce
  • 2 tbsp capers (chopped)
  • 3 small eggplants
  • 9 lasagna sheets
  • 10 oz mozzarella
  • Fresh basil

Instructions

  1. Preheat your oven to 400°F. Grease a deep lasagna dish.
  2. Slice eggplants into 0.5-inch discs and place them on baking trays. Sprinkle with salt and pepper, then spray lightly with cooking oil. Bake for about 10 minutes.
  3. In a bowl, whisk together ricotta and whole milk until smooth, stir in parmesan, and set aside.
  4. In a skillet over medium heat, sauté diced onion and garlic in olive oil until translucent. Add tomato sauce and capers; simmer for a few minutes.
  5. In the greased lasagna dish, layer: start with sauce, then lasagna sheets, roasted eggplant, ricotta mixture, and mozzarella. Repeat layers ending with mozzarella on top.
  6. Cover with foil and bake for 40 minutes; uncover and bake an additional 20 minutes until golden brown.
  7. Let cool for 10 minutes before slicing; garnish with fresh basil.
