  • 15 oz unsweetened pumpkin purée (one can)
  • ¼ cup peanut butter
  • 30 oz cannellini beans (two cans, drained)
  • 2½ cups low-sodium chicken or vegetable broth
  • Salt and pepper (to taste)

Instructions

  1. Sauté chopped onion, celery, carrots, and garlic in avocado oil over medium heat until softened (5-7 minutes).
  2. Add ground meat and cook until browned (5-8 minutes), breaking it apart as it cooks.
  3. Stir in smoked paprika, red chili paste (or chili powder), cumin powder, onion powder, and garlic powder; mix well.
  4. Incorporate pumpkin purée and peanut butter until combined.

  6. Simmer on low for 30 minutes or use an Instant Pot on high pressure for 10 minutes followed by natural release.
