  • 1 cup oat flour
  • 1/4 cup oats (for topping)
  • 1/2 cup melted refined coconut oil
  • 1/3 cup + 2 tbsp pure maple syrup
  • 1 1/2 cups cherries (fresh or frozen)
  • 1/2 tsp cornstarch

Instructions

  1. Prepare the cherry filling by heating cherries, maple syrup, and water in a saucepan over medium heat. Smash gently, stir in cornstarch, and simmer for about 5 minutes until thickened. Chill.
  2. For the crust, mix almond flour, oat flour, and salt in a bowl. Add coconut oil, maple syrup, and vanilla extract until well combined.
  3. Press two-thirds of the mixture into an 8×8 baking dish as the base.
  4. Spread chilled cherry filling over the crust layer.
  5. Mix oats into the remaining crust mixture and sprinkle on top of the cherries.
  6. Bake at 350°F for approximately 30 minutes until golden brown. Cool before slicing.
