  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup coarsely chopped macadamia nuts (or crushed graham crackers for nut-free)
  • 4 tablespoons melted butter
  • 3 blocks (24 oz) cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons orange extract
  • 8 ounces semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, macadamia nuts, melted butter, sugar, and vanilla bean paste. Press into the bottom of a springform pan.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in heavy cream, orange extract, and food coloring if desired.
  4. Pour filling over crust and bake for about 60 minutes until set but slightly jiggly in the center.
  5. Let cool completely before refrigerating for at least four hours or overnight.
  6. For ganache, heat heavy cream until steaming and pour over chocolate chips; stir until smooth and add melted butter.
  7. Once chilled, pour ganache over cheesecake and serve.
