  • 1/2 cup salted butter, softened
  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted
  • 1 tbsp oat flour
  • 2 tbsp white sugar
  • 1/2 tbsp cinnamon
  • 1/4 cup salted butter, slightly softened
  • 1/4 cup light brown sugar
  • 1/4 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix softened butter, applesauce, eggs, white sugar, and vanilla until creamy.
  3. Sift in almond flour, oat flour, baking powder, and salt; stir until smooth.
  4. In another bowl, combine melted butter, oat flour, white sugar, and cinnamon for the filling.
  5. For the streusel topping, mix room temperature butter with brown sugar, almond flour, oat flour, and cinnamon until crumbly.
  6. Grease an 8×8 baking dish and layer half the batter, followed by half the filling; swirl gently.
  7. Add remaining batter on top; sprinkle with remaining filling and swirl again.
  8. Bake for approximately 25 minutes; press streusel topping on cake and bake for another 18 minutes.
  9. Cool completely before slicing into squares.
