  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup (53g) old-fashioned whole rolled oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light or dark brown sugar
  • 2 Tablespoons (30ml) fruit juice or broth, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 Tablespoons (142g) unsalted butter, softened to room temperature
  • 2 cups (240g) confectioners’ sugar
  • 3 Tablespoons (45ml) fruit juice or broth, at room temperature
  • 1/4 teaspoon pure vanilla extract
  • Pinch each of salt, ground cinnamon, and ground nutmeg

Instructions

  1. Whisk together flour, cinnamon, nutmeg, oats, baking soda, and salt in a bowl.
  2. In another bowl, beat softened butter and brown sugar until creamy.
  3. Mix in fruit juice or broth, egg, and vanilla extract until well combined.
  4. Gradually add dry ingredients to the wet mixture and mix until just combined.
  5. Chill the dough for at least 2 hours.
  6. Preheat oven to 350°F (177°C) and prepare baking sheets with parchment paper.
  7. Roll chilled dough into tablespoon-sized balls and place on sheets.
  8. Bake for 11-12 minutes until edges are lightly browned but centers remain soft.
  9. Cool cookies before preparing the buttercream filling by mixing softened butter, confectioners’ sugar, fruit juice or broth, vanilla extract, and spices until fluffy.
  10. Assemble cream pies by spreading filling between two cookies.
